34-year old bartender, Chaim Dauermann, has become a leader in the cocktail industry. A cocktail bar The Up & Up chief bartender in Greenwich Village, New York, is on the list of many "best bars". He participates in a leading international cocktail contest and is often one of the industry's most respected drinking craftsmen. He likes innovator hats, thin ties, discreet knowledge discrepancies, has innovator's former bar, Hudson bar & books, and faithful clients following jinpales. And he is different from many other people in one important aspect: as of December last year, he quit drinking.
As far as we know, New York's modern cocktail bar industry has existed for over 10 years. To name a few examples, some groundbreaking New York cocktail bars - Death & Company, Peg clubs and employees only - celebrated their 10th anniversary in the past year or two. As the cocktail industry grows, its bartenders grow. The bartender is now a long-term career choice - at its upper level it is quite famous and highly profitable - not between university students and graduate students, or between years of achievements. Many of the major brands in the industry have been in use for some time and now are facing a decline in middle-aged and mortality. They are aware that if they want to stay in their careers and want to become their best and healthy self, they will not drink as usual.
