Enzymes in Industrial Processes Enzymes are substances that act as catalysts in organisms and adjust the rate at which chemical reactions occur without change during this process. Enzymes are used in industrial processes such as baking, brewing, detergents, fermented products, pharmaceuticals, textiles, starch processing. The following is a series of techniques showing how enzymes are used for baking.

In some cases, it is impossible to use isolated enzymes in industrial processes, but it is impossible to use whole cells. This can occur when extraction and purification of intracellular enzymes is very difficult or expensive, or where more than one enzyme is required to cooperate. When whole cells are used, the substrate must diffuse into the cells before the reaction takes place. The product may diffuse out of the cell or destroy the cell and release the cells. The product can then be extracted and purified.

White biotechnology, also known as industrial biotechnology, is biotechnology applied to industrial processes. An example is to design organisms to produce useful chemicals. Another example is the use of enzymes as industrial catalysts to produce valuable chemicals or to destroy harmful / contaminated chemicals. White biotechnology consumes less resources than traditional processes used to produce industrial products. "Yellow biotechnology" refers to the use of biotechnology in food production, such as the production of wine, cheese and beer by fermentation. It is also used to refer to biotechnology applied to insects. This includes biotechnology-based methods for controlling harmful insects, characterization and use of active ingredients or genes for insects studied, and various other methods for agriculture and medicine .
