Elizabeth David's omelet and a glass of wine are the first books published by Lyon Press (formerly Lyon and Burford) and are published as part of the Cook Classic Library series. The ability to boil an egg is a basic cooking technique, a beautiful example showing the relationship between simple ingredients and fine meals. This is a misunderstanding of the historical 'Paradox of France' - the population of France knows this better than most people
