Olstra: or WOE. Even if American society's appetite madness can avoid fat intake, if you can enjoy the saltiness accompanying it, it will not be that good. Strangely, it is possible to pass a product called Olestra. This seemingly perfect product created by Proctor and Gamble was recently approved by the FDA for use as a substitute for snack food fat such as potatoes and cornflakes. "Orestra is a zero calorie fat substitute designed to replace 100% fat used to make delicious food and snacks" (http://www.olestra.com).

Olestra is the first fat substitute approved by FDA with thermal stability at high temperature and snacks made with olestra are delicious. In order to be approved in 1996, P & G exceeded FDA guidelines and requirements for evaluating the safety of food ingredients. When the Food Advisory Committee consisting of 22 people evaluated Orestra's data, most people thought that Olestra could safely use it for delicious snacks. In fact, former FDA commissioner Dr. David Kessler called olestra "one of the most widely studied foods ever". In addition, P & G provided research data on more than 20,000 pages of olestra according to relevant requirements. Over the years, hundreds of clinical trials have proved the safety of olestra

Why is it difficult to digest orestra molecules? If you have read the fat mechanism, you know that a typical fat molecule is basically three long molecules bound by carbon and hydrogen (see Fat mechanism). In Orestra there are six to eight chains, not three. These extra chains make the molecular structure of Orestra very different from typical fat molecules. The reason why your body can not digest Olstra is similar to the reason why your body can not digest wood (see Food Structure). Cellulose molecules are too long for your stomach because your stomach lacks the correct enzyme to handle it. The same can be said about Olestra. Olestra just passes through your stomach and intestines. Calories from potatoes, corn, and other foods are included in the Olestra tip, but it does not include calories from Orestra (unlike ordinary potato chips containing 9 calories per gram of fat ).
