Both refer to a group of human beings, but traditionally "human" represents a general group and "person" represents a smaller, more specific group. Example: At least 500 people attended the concert. Here, the audience of the concert is a huge general population. The nine baseball teams are bald. Because the players mentioned in this sentence are specific, people are a better choice.
However, in reference candidates such as AP sample and New York Times, only "people" is used if it is a direct reference or part of a title (eg, a person who is missing)
Your best bet is that Mark is one of the most generous people I have ever seen. But this is a matter of style, as long as you follow the above differences, "people" is an acceptable choice of words. Of course, unless the editor called the AP sample book "Bible"
