These gentle and sweet cornbread muffins are the perfect side of any southern barbecue or southwestern cuisine. As my children love them so much, I continue to pull out their little hands from bread basket so that they will not fill the main course. I know that baking at dinner may seem a little ambitious, but these cornbread muffins are very easy to prepare. You can pick up the batter in 10 minutes and I usually use them instead of starch.
